| A Suitable Toast
Drinking with Chinese food presents a few pleasant choices. Beer is the best of the alcoholic

Another perfect complement, however, is Chinese tea. The beauty
of Chinese tea culture is to have it plain, without milk, sugar or lemon. It is served in little
handleless cups and in a pot left on the table. When the pot is empty, simply turn the lid upside
down on the pot. When the waiter sees this, he will refill it. It is believed that the simplicity
of Chinese tea can pacify the heat in the dramatic Chinese cooking.
